Ingredients
- A glug of olive oil or coconut oil
- Πtsp (1.25ml) mustard seeds
- Πtsp (1.25ml) cumin seeds
- A pinch of fenugreek (methi) seeds
- 3 cloves
- 3 star anise
- 1 piece cinnamon stick
- 2â3 green chillies, left whole (add according to your preference)
- 2â3 red chillies (add according to your preference)
- 1 sprig curry leaves
- 1 large onion, peeled and finely diced
- 5â6 garlic cloves, peeled
- œ tsp (2.5ml) yellow hing
- 1â2 Tbsp (15â30ml) mild Kashmiri chilli powder
- 1 tsp (5ml) curry powder (I used Pakco Masala)
- œ Tbsp (7.5ml) coriander powder
- œ Tbsp (7.5ml) cumin powder
- 1 tsp (5ml) fennel powder
- 1 tsp (5ml) turmeric powder
- œ medium cabbage, sliced into thick, chunky slices
- Salt to season
- 1 large ripe tomato, chopped into pieces
- 1 can gram dhal, drained
- A handful of fresh coriander
Letâs Cook đ
Heat the oil in a big pot.
Toss in the mustard seeds, cumin seeds, a pinch of fenugreek (methi) seeds, cloves, star anise, cinnamon stick, green chillies, red chillies and curry leaves.
Once the seeds pop and the leaves splutter, throw in the onions and garlic. Cook until the onions just start to brown.
Add the hing and give it a quick stir.
Toss in the mild Kashmiri chilli powder, curry powder, coriander powder, cumin powder, fennel powder and turmeric powder. Give it a quick stir and cook out for about 30 seconds. Lower the heat.
Then stir in the cabbage and salt. Give it a good mixie mix, getting the masala nicely coated throughout the cabbage.
Add a bit of water, cover and cook for about 10 minutes, until the cabbage melts down, stirring occasionally and adding water as and when needed.
When the cabbage has cooked down, add the chopped tomatoes. Cover and cook until the tomato softens.
Add the gram dhal and stir it in.
Cover and cook for a few more minutes, allowing all those delicious flavours to meld together.
Garnish with fresh coriander leaves.
Turn off the heat.
Serve with roti, rice or bread.
