#Happy&Excited! – I am so thrilled to share this recipe with you. We have the all time favourite dosa filled with fried potato, stir-fried vegetable and smothered with mint, coconut & yoghurt chutney. You can omit the potato if you like and just go with the rest of the ingredients. But I would prefer if you try it as I have prepared it. All I can say is that I really really love this…and I can confidently say that this will become one of your favourites as well.
Preparation: 15 minutes
Cooking time: 25 -30 minutes
Serves: 4 – 6
Ingredients
4 Dosas
Butter lettuce or any lettuce of your choice
Potato filling
4 medium potatoes steamed or boiled until soft but firm
1 tbsp (15ml olive oil)
¼ tsp black mustard seeds
¼ tsp cumin seeds
1 sprig curry leaves
½ tsp yellow asafoetida
½ tsp (7ml) turmeric powder
2-3 dry red chilli roughly crushed
½ tsp salt
Let’s cook:-)
- Cut soft potato roughly into small squares
- Heat oil in a pot. Add mustard seeds, cumin seeds, and curry leaves. Once mustards seeds pop and leaves splatter – Add asafoetida, turmeric powder, chilli potato and salt.
- Give it a good stir and sauté for 5 minutes, stirring every now and then blending in the spices. Once cooked – remove from heat and keep aside.
Potato filling
Stir Fry Vegetable
1 tbsp (15ml) olive oil
1 tsp (5ml) finely chopped garlic
1 tbsp (15ml) finely chopped ginger
10 baby corns sliced lengthwise in half
1 small red capsicum julienned (½ cup)
1 medium carrot – julienned (½ cup)
1 ½ cups cabbage finely shredded
1 tbsp (15ml) soy sauce
¼ tsp Salt
Let’s Cook 🙂
- Heat oil in a pan or wok. Add garlic & ginger, swirl it in the oil for a few seconds.
- Immediately add all the vegetable and stir-fry for 3 minutes.
- Add soy sauce and stir fry for a further 2 minutes.
- Season with salt.
- I personally like my vegetable stir-fry crunchy but you can cook it for as long as you like.
Stir-fried Veg for Dosa filling
Mint & Coconut Chutney
1 cup fresh mint leaves washed out thoroughly
½ cup fresh coconut roughly cut up
2 -3 green chillies
1 small clove garlic
Water for grinding about ¼ cup
½ cup (125ml) sour milk (plain yoghurt)
½ tsp salt
This is how:
- Use a spice grinder. Add the coconut, mint leaves, chillies and garlic. First use the pulse action to break down the coconut. Add water if necessary and grind to a smooth paste.
- Finally add sour milk and salt. Give it a quick blitz. Remove and place in a bowl.
Let’s assemble these wraps

- Place lettuce in the centre of the dosas
- Add a bit of potato followed by some stir-fry.
- Spoon over chutney
- Take one end of the dosa – fold over filling and roll up tightly
- Serve with additional chutney if you like.
