Crumpets are super easy to make, just whisk all the ingredients together then pour dollops of batter into a pan and voila!!! Benefits of crumpets is that they can be served as is or topped with blueberries as well as bananas and a drizzle of maple syrup.   A dollop of jam is another tasty option.

  • 1 1/2  cups (375ml) white plain flour
  • 1 1/2 tbsp (22.5ml)  baking powder
  • 1 1/2 cups(375ml)  soy or almond milk
  • 3 Tbsp (45ml) brown sugar
  • 3 Tbsp (45ml) vegetable oil
  • pinch of fine salt
  • oil for frying (optional)
  • 2 bananas sliced
  • Fresh mixed berries
  • Maple syrup

This is how 😊 

  1. Whisk all the ingredients together in a bowl.  Allow to stand for 5-8 minutes. 
    Heat a non-stick pan on medium heat.  Add a few drops of water in the pan, when it splatters – it’s ready.
  2. Add a drop oil.  Wipe it out with paper towel then use a ¼ cup measurement to scoop out and pour the batter into the pan. 
  3. Once it starts bubbling, flip it over and cook for a minute or two. Repeat until you use up all the batter
  4. Cook crumpets for a minute or two on each side
  5. Sweet serving suggestions: Top with bananas and berries and generously pour on maple syrup.
