Chia seeds are the tiny black seeds from the Salvia hispanica plant, a member of the mint family which comes from Central and South America. The word “Chia” is the ancient Mayan word for “strength”.  It is said that the ancient Aztecs and Mayans used chia seeds as a source of energy.  These tiny seeds offer enormous health benefits, Chia seeds are rich in fibre, antioxidants, minerals, and heart-healthy omega-3 fatty acids. They improve the risk factors for heart disease and diabetes, as well as aids a good healthy gut.

Recipe as follow:

Preparation:  10 -15 min     Cooking time:  4 hours – overnight         Serves:  2

Ingredients

  • 6 Tbsp (90ml) chia seeds
  • 2 cups almond or soy milk (unsweetened)
  • ½ tsp cardamom powder
  • 2 tsp (10ml) maple flavoured syrup
  • Cashew nuts
  • Pomegranate seeds
  • Sliced kiwi

This is how

  1. Mix the chia seeds and milk together in a big jug or bowl.  Place in the fridge or a cool place. For the first hour stir the mixture every now and then to prevent the seeds from clumping together.  If this happens just use the back end of your spoon and press it out.
  2. When the seeds have absorbed all the liquid, it is ready.
  3. You may serve this warm or cold.  Heat in a microwave for a minute for a warm pudding.
  4. Add the cardamom powder and syrup and mix well.
  5. Spoon the mixture into serving glasses or bowls.  Top with fruits and nuts. 
  6. Best served with ripe bananas as well.
