There is just something magically about grilled brinjal.  The smoky charred flavoured brinjal paired with fresh slices of tomatoes gently layered between  tender fresh and creamy mozzarella and finely topped with fresh basil pesto…is just Food Fabulous.

Preparation:  15 minutes     Cooking/Grilling time:   15 minutes max    Serves:  1 – 2

INGREDIENTS

1 large long brinjal

Olive oil for brushing

1 medium tomato sliced into disks

125g Fresh Mozzarella cheese – sliced into disked

Basil Pesto

½ cup (125ml) Cashew Nuts

½ cup (125ml) chopped basil leaves with stalks

1 small clove fresh garlic peeled

1 – 2 green chillies finely sliced (adjust according to heat tolerance)

½ tsp salt

¾ cup extra virgin olive oil

Squeeze of lemon juice

Let’s Cook 🙂

Wash and slice the brinjals lengthwise into 1 ½ cm thick pieces.

Lightly brush with olive oil and sprinkle some salt on both sides

Place on a hot griddle pan for 3-4 minutes on each side until cooked but still firm.  Once done remove and keep aside.

Grind all pesto ingredients in a food processor accept lemon juice and salt. Remove from processor –  add lemon juice and salt – Keep aside

On a grilled slice of brinjal – layer one slice tomato, followed by a slice of mozzarella cheese – be sure to overlap the tomato and cheese disks.

Spread a generous amount of basil pesto  and sandwich this with another slice of grilled brinjal

And there we go a perfect NO Bread sandwich 🙂

Hot tip!  You may serve this as a NO Bread tartine or NO bread Bruschetta 🙂  Perfect for low carb options
