These cookies are light, crisp with a itsy bitsy chew from the coconut and added decadence from the chocolate. I love these because they are quick and easy to make. Warning! – Tasty alert!!! they tend to disappear in no time.

125g vegan fat spread (flora vegan)
½ Cup (125ml) castor sugar
¾ cup desiccated coconut
1 Cup (250 ml) cake wheat flour
⅛ cup (30ml) vegan cocoa powder
A pinch of salt
1 off 85g dark aero to decorate 

Let's bake😃
Preheat oven at 180c (fan) 
Line baking tray with baking paper or non-stick spray (keep aside)

In a mixing bowl - cream the vegan fat spread, castor sugar and vanilla extract until light and fluffy. (I used an electric mixer)

Mix in the coconut then add the flour, cocoa powder and salt.  
Mix until you have a nice dough.

Roll small pieces of dough into balls - then flatten out into ½ cm in thickness. Place on a baking tray.  Use the back of the fork to create an indentation.

Bake for 12-15 minutes (depends on the thickness of the biscuits). 

Allow the biscuits to cool. When the biscuits are cold.  Melt the areo the microwave wave for 30s to a minute.  Drizzle with a teaspoon over the biscuits.
