
Today I have a big bowl of deliciousness for you. It is loaded with flavour, texture, nutrients and the colours are oh so beautiful. This dish is quick and easy to make. All you have to do bake – bowl up and serve.
Prep time: 15 mins Baking time: 25-30 Serves: 4
- 500g mushroom – cleaned and cut into halves
- 1 small punnet baby courgettes – washed and cut into 1.5 cm pieces
- 1 med/large red pepper – rinsed, remove seeds and cut into cubes.
- 2 cobs sweet corn. (Slice corn off the cob)
- 2 small carrots peeled and sliced
- 90g baby leaf lettuce
- Olive oil
- 1 tsp (5ml fresh garlic paste)
- 2-3 tsp (10-15ml) mild and spicy curry powder (I used Raja Curry Powder)
- 1 red chilli crushed (optional).

Dressing
- 1/2 cup (125ml) cashew nuts
- 1/2 cup (125ml)+ 45 ml water
- 30ml cup of mint leaves
- 1 small green chilli (adjust to heat tolerance)
- Juice of one lemon
- Season with salt
- Blend all the ingredients in a blender until smooth. Store in a small jar.
- Should you like a bit of sweetness, you may sweeten with a bit of stevia or sweetener of your choice.
This is how:-)
- Preheat the oven at 200c.
- Start by making the cashew nut dressing.
- In a bowl – toss in the cleaned and cut mushrooms. Drizzle over some olive oil. Add the curry powder, garlic and crushed red chilli. Season with salt. Mix this thoroughly.
- Now, on a baking sheet. Layer the vegetables side by side.
- Start with the mushrooms followed by the corn, peppers, carrots and courgettes.
- Drizzle over some olive oil. Season with salt (Except for the mushrooms – this has already been seasoned).
- Pop into the oven and bake for 20-25 minutes.
- When the veggies are cooked, assemble in separate serving bowls.
- Start with a good handful of lettuce
- Then add a portion of mushrooms followed by the corn, peppers, carrots and courgettes.
- Serve with a generous serving of cashew and mint dressing – approximately (30-45 ml).
- Note: To the bowl: You may add quinoa, black rice chickpeas or beans of your choice.
- You may also add or omit veggies to your preference.
