Aaaand…summer won’t be complete without a refreshing fruit salad.  This is my version of what I like to eat. I love how all the fruit comes together creating the perfect symphony of flavours.  The best part, it can be eaten for breakfast, as a light dessert or during snack time. This is by far the simplest and best fruit salad I make and the most flavourful one.

  • 1 small pineapple (Peeled and cut into small bite size pieces)
  • 1 small paw-paw (Peeled and seeds removed)
  • 1 big red apple (Rinsed, removes seeds and cut into bite size pieces)
  • 3 – bananas (Peeled )and sliced
  • 1 cup of red or black grapes (washed and sliced into halves)
  • 1 cup strawberries (Washed and sliced)
  • 1 cup cherries de-seeded and cut into halves (if available)
  • 1 orange (Peeled and cut into small bite size pieces)
  • 1- 2 Guavas (Peeled and cut into bite size pieces) (if available)
  • 4-6 Granadillas (scoop out pulp) o.r 150g store bought granadilla pulp
  • 1 Orley whip (whipped into stiff peaks)  or serve as is.
  • To garnish mint leaves or edible flowers.

This is how:  

Wash, cut and peel all the fruit as per the instruction.  Then toss into a big mixing bowl.  

You may pour in the orley whip as is into the fruit salad or whipped it up and serve as a topping. (note: you may add a bit of sweetner before whipping – about one tablespoon of castor sugar or a few drops agave or stevia)

Garnish with fresh mint leaves or edible flowers.

Note:  you may also serve this with a scoop of ice-cream if you like.
