Broccoli is a nutritional powerhouse full of vitamins, minerals, fibre and antioxidants. I normally like adding them to stir-fry, salads and even curries. It is is interesting to note that different cooking methods may affect the vegetable’s nutrient composition. Broccoli is a healthy addition to your diet whether cooked or raw.

200g Broccoli stems – rinsed 

100ml water

1 tsp (5ml) (Ina Paarman’s) vegan stock powder 

½ tsp (2.5ml) salt 

½ tsp (2.5ml) fresh garlic paste

Pinch of chilli flakes (add more or less as preferred)  

Few grinds of black pepper 

Heat pan over medium/hot  heat.  

Pour in water along with vegan stock powder, salt, garlic paste, chilli flakes and pepper.  Swirl the pan around to combine ingredients.  

Toss in the broccoli –  give it a toss or good mix – cover and steam for 4 mins.
