
Rice wraps are healthy and super easy to make. All you need is some fresh vegetable julienned, rice paper and a dipping sauce and tada tadaaa an elegant entrée or snack whipped up in a jiffy. Rice wraps are packed with bright beautiful colours and fresh wholesome flavours.
Recipe as follow:
Rice Paper Wraps served with a spicy peanut butter sauce
Preparation: 30 minutes Makes 10 wraps
Ingredients
- 10 rice paper wraps
- 1 cup (250ml) finely chopped purple cabbage
- 2 small carrots washed, peeled and julienned
- 1 small red pepper washed peeled and julienned
- 1 Small bunch coriander leaves washed (remove thick stems)
- 1 cup (250ml) cooked rice noodles
- Black sesame seeds to garnish
This is how:
- Prepare the rice paper wraps as per the instructions on the pack.
- Soak one rice paper wrapper at a time for a 15-20 seconds water. When soft but still firm and pliable, gently remove and place on to a clean surface. Start 5 cm away from the edge nearest to you. Stack the vegetable and rice noodles almost side by side. Careful not to overload.
- Now gently pull the bottom of wrapper over the filling and roll once. Then flip over the sides and continue to roll. Continue and repeat the same process for the remaining of the wrappers and filling.
Spicy peanut sauce
- 2 tbsp (45ml) smooth peanut butter
- 2 tbsp (30ml) low sodium light soy sauce
- 1 tbsp lemon juice
- 2 tbsp water
- 1 large clove garlic minced
- 1-2 chillies finely sliced
- 1 tbsp (15ml) brown sugar
- 1 tbsp (15ml) finely chopped spring onions
Whisk all the sauce ingredients together
