Today I have an inexpensive meal preparation for you.  The dish is loaded with flavour and is high in protein as well as vitamins and  fibre.  Good nutritious food does not have to burn a hole in your pocket especially during these trying times that we are now faced with.  
Preparation time:  10mins    Cooking  time: 20-30mins       Serves:  4
Ingredients 
A Glug of oil 
1/4 tsp black mustard seeds
1/4 tsp cumin seeds 
Pinch of fenugreek seeds 
2 each of small cinnamon sticks, star anise, cloves and cardamom pods
1 sprig curry leaves  
1 small onion  finely chopped
1 tbsp (15ml) garlic & ginger paste
1-2 tbsp (15ml-30ml) mild  chilli powder or paprika powder (adjust quantity to heat tolerance)
1 tsp(15ml) cumin powder 
1 tsp(15ml) coriander powder 
1 tsp (5ml) turmeric powder 
1 tbsp (15ml) garlic powder
1 cup (250ml) dry soya mince soaked in 3 cups hot water
Salt to season
1 ripe medium Jam tomatoes chopped 
2 medium potatoes peeled and cubed
1 tbsp (15ml) kasuri methi/dried fenugreek leaves (optional) 
Hot water for cooking 
½ cup(125ml)  frozen peas thawed 
Fresh coriander to garnish
Let’s cook :-)  
Start by soaking the dry soya mince in boiling water until re hydrated.  (note:  the water should be drained before cooking)  
Heat oil in a pot 
Add the mustard seeds, cumin seeds, fenugreek seeds, as well as cinnamon sticks, star anise, cloves and cardamom pods.  As soon as the seeds start to pop - toss in the curry leaves.  When the leaves start to splatter -
Throw in the onion and cook until soft and translucent.
Stir in the garlic and ginger paste - cook for 30 seconds
Toss in the chilli powder, cumin powder, coriander powder, turmeric powder, and garlic powder - give it a mix.  
Add the soya mince - give it a good mix to incorporate the spices - cook for a few minutes
Stir in the chopped tomato -  add about ½ cup hot water and  cook for a minute or two.
Add the chopped potatoes- give it a good stir and cover and cook for 5 mins then add the kasuri methi.
Cover and cook again until potatoes are soft - adding more water from time to time.  
When the potatoes are soft, toss in the peas and cook for a further two more minutes.
Garnish with fresh coriander leaves 
Serve with hot rice or breads of your choice
