Bhajias are quite a popular favourite in Indian homes. They are made from chickpea flour which is gluten-free.  It is season with spices and fresh ingredients like onion, spring onion, coriander leaves and spinach like I have added. In South Africa they are also commonly known as chilli bites. Bhajias are the perfect snack as they are delicious and rather quick and easy to make. 

Preparation: 5 minutes              Cooking Time:  10 – 20 minutes

Ingredients

  • 1 1/2 cups besan flour (375ml)
  • 3 tsp (15ml) baking powder
  • 1 tsp (5ml) coriander powder
  • 1 tsp  (5ml) cumin powder
  • 1/2 tsp (2.5ml) turmeric powder
  • 2 tsp (10ml) chilli powder
  • 1 tsp (5ml) salt
  • 1/2 tsp (2.5ml) asafoetida
  • 1 – 1/2 cup (375ml) finely chopped spinach +
  • 1 Small onion finely chopped 
  • 1/2 cup (125ml) finely chopped spring onions
  • 1/2 cup (125ml) finely chopped coriander leaves
  • 2-3 finely chopped green chillies
  • 3/4 cup cold water
  • Oil for deep frying

Mix all ingredients together in a bowl. 
Heat the oil  in a deep pan – med to hot
Spoon in the batter or use your hands to drop in small balls of batter and fry until they float and golden brown.  Be sure to turn them while frying so that they cook all over.

(If the batter is to watery add more besan flour.  It’s best to add little bits of water at a time)
