Aaah Butter Beans, I just love the delicate flavour of these beans. Sometimes I cook them in a curry or add it to a rice dish (my Spinach and Butter Bean Rice) and then there are times I just want to enjoy the natural flavour and the best way to do this, is, incorporating them into a salsa. These beauties are available throughout the year, dry or canned. I normally just pressure the dry beans until soft but also keep a few cans handy. I find that combining my Butter Beans Salsa to veggie burgers and sandwiches immediately transforms something from blah into “Blah di Good” 🙂 Not only do these beans offer a low cholesterol, high fibre and good protein but flavour as well. Now how awesome is this. Recipe is follow:
Butter Bean Salsa
1 cup (250ml) cooked Butter beans
1 large plum tomato finely chopped
1 small green pepper chopped -½ cup (125ml)
½ cup (125ml) finely chopped onion
¼ cup black olive cut into small pieces
½ cup (125ml) finely chopped fresh coriander leaves
½ cup (125ml) fresh basil leaves roughly torn
2-3 green chillies finely diced
1 disk Feta cheese (optional)
30ml olive oil
1 tbsp (15ml) fresh lemon juice
¼ tsp minced garlic
1 tsp honey or brown sugar
½ tsp mango powder
Salt & pepper to season
Lets get this salsa going 😉
Mix all ingredients in a bowl. Toss to infuse the flavours. Partially smash a small portion of the salsa, using the back end of a fork.
Serve as a side dish at a braai or as a topping on sandwiches or Veggie burgers.
