
Are you looking for quick and easy vegan sweet treats? Well look no further. Chocolate, cashews and currants what a heavenly combination. These chocolate delights are awesome to gift to family, friends and loved ones. Do check out my youtube video on how to make these clusters and package as beautiful gifts.
Cooking/Microwave time: 90 seconds Setting time: 30mins Yields: 10-12
- 1 cup (250ml) roasted cashew nuts
- 1/3 cup (80ml) currants (small dried black raisins)
- 200g vegan dark semi-sweet melting chocolate (or plain vegan chocolate)
This is how 🙂
- Place roasted cashews and currants into a medium size mixing bowl – keep aside
- Break up the chocolate into a microwave safe bowl
- Melt chocolate in the microwave at 30 seconds intervals and stir each time until fully melted.
- Pour over the melted chocolate onto the cashew and currants.
- Give it a good stir coating the cashews and currants.
- Scoop out into moulds and freeze for 30 minutes.
- When the clusters have set – remove from the moulds
- Note: you may use any nuts of your choice (hazelnuts or Brazil nuts and any dried berries or fruit
