
This hearty vegetable stew is comfort food at it’s best. It will definitely warm your soul.
Preparation time: 10 mins Cooking time: 30-40 mins Serves: 3-4
Ingredients
- 1 tbsp (15ml) olive oil
- 1 small onion finely chopped
- 1/4 cup (60ml) finely chopped celery stalks
- 1 tbsp (15ml) finely chopped garlic
- 1-3 tsps (5-15ml) chilli powder or paprika powder
- ½ tsp (2.5ml) cumin powder
- ½ tsp (2.5 ml) turmeric powder
- 1 dry red chilli (optional)
- 4 small potatoes peeled and halved or quartered
- 1 medium carrot peeled and chopped
- 1/2 small cabbage sliced (appropriately 4-5cups)
- 1 large green pepper cut up into chunky bits
- ¼ cup (60ml) roughly chopped parsley
- 1 tbsp (15ml) tomato paste
- 1 tbsp (15ml vegan vegetable stock powder
- 3-4 cups hot water
- ¼ tsp white pepper powder
- salt to season
- ¼ cup (60ml) roughly coriander leaves
This is how:
- Heat the oil in a nice big pot.
- Toss in the onion and celery. Sauté until the onions are soft. Add the garlic – cook for a few second then spoon in the chilli powder, cumin powder and turmeric powder – give it a quick mix.
- Now toss in the potatoes, carrots, cabbage and peppers – give this a good stir incorporating all the spices.
- Add the parsley, tomato paste, and vegetable stock powder, and salt – give this another good mix, then add the water. Cook until all the vegetable are soft.
- When cooked add the pepper and coriander leaves. Test taste for salt and adjust accordingly.
- Serve with basmati rice or bread of your choice
