Lately I have been so peckish and scavenging through the fridge and cupboards for something to munch munch more 🙂  and this is what I put together.  I call this my Super Bowl because:  Peanuts are an excellent source of many vitamins and minerals. Sprouts are the “Power House Of Nutrients” and an excellent source of protein, fiber, and vitamin B. The pumpkin seeds are packed with fiber, vitamins, minerals, along with numerous health promoting antioxidants and the sunflower seeds are an excellent source of vitamin E, Copper and B vitamins……and Voila!!! a Super Bowl of wholesome goodness

this is what you will need…
Ingredients:
1 cup (250ml) peanuts (ground) boiled or pressure cooked until soft
1 cup (250ml) cucumbers finely diced
1 cup (250ml) green mung sprouts
15 mini Italian or cherry tomatoes halved
½ cup (125ml) finely chopped red onion ( add more or less)
1 small chilli finely sliced (optionally)
2 tbsp (30ml) pumpkin seeds
2 tbsp (30ml) sunflower seeds
1 lemon
½ tsp salt (adjust accordingly)
ÂĽ tsp white pepper (add more or less)
½ cup (125ml) fresh coriander leaves
This is how:Â
Add the softened peanuts, diced cucumbers, sprouts, tomatoes, onion, chilli, pumpkin and sunflower seeds into a bowl.
Season with salt and pepper and a squeeze of lemon juice.
Finally garnish with coriander leaves. Give it a good mix and voila!!! You have a Super Bowl of wholesome goodness.Â
#wink_wink:Â You may lightly toast pumpkin and sunflower seeds in a pan over low heat. or dress salsa with a regular Greek vinaigrette
