Today I have a delicious zucchini and red pepper sub smothered between a minty spicy peanut spread. This is quick and easy to put together and makes for a perfect work or picnic lunch.

Veg Sub with a Mint Spread
Preparation:  15-20 mins        Cooking time: 5-8 mins     Serves: 2 
Ingredients
Oil for frying 
1 large zucchini  
1 large red pepper
1 small clove garlic  - peeled and crushed
Chili powder to season
Salt to season

Rinse and slice the zucchini into 1 cm strips 
Rinse and de-seeded the red pepper.  Cut into thick strips about 5 cm width pieces.
Heat oil in a pan.  Toss in the garlic then place the zucchini and peppers in the pan. Season with salt and chilli powder. Cook until they just start to soften.  Keep aside for assembly.

Mint spread
1 cup (250ml) tightly packed fresh mint leaves - rinsed
½ cup(125ml)  fresh coriander leaves - rinsed
1 clove garlic
30ml fresh lemon juice
30ml cold water
¼ (60ml) peanut butter 
1-2 dried red chillies - crushed 
Salt to season
To a blender toss in mint and coriander leaves.  Pulse a few times.  Then pour in the lemon juice and water.  Blitz until smooth.  Pour the mixture into a bowl then spoon in the peanut butter, red chilli and season with salt.  Mix with a spoon until the ingredients are well incorporated and smooth - keep aside.  

Sub filling
2 long vegan rolls of your choice (I used ciabatta) 
Specialty lettuce 
Purple cabbage finely sliced 

Assembly 
Slice the rolls lengthwise in half 
Generously spread the mint spread on the bottom half and top half of the roll
Layer on  a good amount  lettuce and purple cabbage 
Add the cooked zucchini  then red peppers followed by thinly sliced red onions
And there you go...enjoy
