
Preparation: 5 minutes Baking Time: 30-40 minutes
- 1 butternut
- 2 small Sweet potatoes
- Drizzle of olive oil
- 1 tsp (5ml) salt
- 2 tsp (10ml) garlic powder
- 1 tsp (5ml) paprika powder
- 1 tsp (5ml) curry powder
- Few sprigs fresh thyme
- Few sprigs fresh rosemary
- 2 dry red chillies roughly crushed
- Few grinds of black pepper (optional)
This is how 😊
- Preheat oven at 200 C.
- Rinse and cut butternut into 4 pieces – remove the seeds (you may cut them in small pieces if you like)
- Wash and cut sweet potatoes into wedges or round disks (do not remove skin)
- Toss all the ingredients into a bowl – give it a nice good mix.
- Place onto an oven tray and bake for 30 – 45 minutes or until sweet potato and butternut are soft. Once done, remove from oven.
- This is best served hot.
