- Prep: 15 mins Cooking time: 35-40 mins Serves:
- 4 FRY’S No Chicken Pieces – 1 Box
- Oil for cooking ½ tbsp (7.5ml) garlic paste
- 1 Tbsp Vegan Chicken spice 3-5 Dry red chillies (divided)Sprinkle of white pepper
- 1 cup (250ml) onions peeled and finely diced½ Cup (125ml) finely sliced leeks
- ½ Cup (125ml) finely chopped celery stalks 2-3 dry red chillies torn into small pieces
- Mushrooms sliced (250g)½ Tbsp (7.5ml) garlic paste
- ½ Cup (125ml) finely diced carrots
- ½ Cup (125ml) frozen peas
- ½ Cup (125ml) frozen sweetcorn
- Few sprigs fresh thyme
- 2 Tbsp Vegan vegetable stock powder
- ½ Tbsp Garlic powder
- 1.5 litres Boiling water
- 1 cup (250 ml) Tubetti pasta
- 1/2 tsp Turmeric powder
- Few grind of black pepper
- 1 Tbsp Vegan chicken spice
- ¼ cup fresh curly parsley leaves roughly chopped (you can add more if you like)
Let’s Cook 😃
- Heat oil in a big pot.
- Toss in ½ a tablespoon of garlic – fry for a few seconds
- Add the Fry’s No Chicken Pieces and give it a good mix.
- Add the chicken spice, 2 chillies and white pepper – give it a good mix – cook for 8 minutes – then remove the fried pieces and keep aside.
- In the same pot – toss in the onion, celery and leeks – give it a quick stir then add the chillies and cook for 5-8 minutes.
- Toss in the mushrooms, add a pinch of salt, cover and cook until the mushrooms reduce in size.
- Spoon in the garlic – give it a good mix and for a few seconds.
- Add the carrots, peas and sweetcorn – give it a good mix to incorporate all the spices.
- Throw in the fresh thyme Spoon in the vegan vegetable stock powder & garlic powder and give it a good mix.
- Pour in the boiling water – give the pot a good stir and bring to a boil.
- Add the Tubetti pasta, turmeric powder and black pepper – bring the pot to a boil and cook for 8-10 minutes until the pasta is Al-dente.
- Throw back in the No Chicken Pieces a tablespoon of vegan stock powder and parsley and simmer for a minute or two.
- Note: if your pasta gravy soaks up, just add more water and more chicken spice and stock powder.
