Masti Mushroom Burger by Videhi

Preparation:               10 minutes

Cooking time:              20 minutes

Serves:                         3 – 4                                                                

Ingredients

1 tbsp olive oil – additional for frying burgers

½ small onion finely diced

250g mushrooms.  (Clean with paper towel and roughly chopped)

1 tsp freshly ground garlic

½ cup canned chickpeas drained.

1 heaped tbsp Cajun spice mix (add more if you like)

1 tsp chilli powder

1 cup fresh bread crumbs made from 2 slices of white bread

1 tbsp corn flour

2 tbsp freshly chopped coriander

1 tsp salt (add more or less)

Burger buns

Purple cabbage finely sliced

Lettuce

Sliced onion rings

Sliced tomato

Eggless mayonnaise

Tomato sauce

Sliced green chilli

Let’s cook 🙂

  • Heat oil in a hot pan. Add onions, cook for 2 minutes until soft.
  • Add mushroom and garlic, cook through, 8 – 10 minutes. Once cooked leave aside to cool.
  • In a bowl roughly mash chick peas, add in Cajun spice mix, chili powder, bread crumbs, corn flour, coriander leaves, and salt as well as cooked mushroom. Gently mix all ingredients.  Divide mixture in 3 or 4 balls and flatten to form patties about 2.5 cm.
  • Fry burgers on medium heat +/- 2-3 minutes on each side until golden brown.
