This wrap is the perfect dance of textures and flavours. Dive into a filling of warmly spiced, chunky potatoes—kissed with turmeric and chilies—then balanced by the cool crunch of lettuce. Tying it all together is a brilliantly green, herby chutney that brings a fresh, zesty punch to every single bite. It’s Simple, satisfying, and downright delicious!
Wash peel and cube the potatoes – boil until they are soft but still firm. Once done, keep them aside.
Heat oil in a pan – when hot, toss in the mustard seeds, cumin seeds, fenugreek seeds. As soon as the seeds pop, throw in the curry leaves and once the leaves splatter – add the onion, red and green chillies. Sauté the onions until soft and translucent.
Add the garlic and turmeric and fry for a few seconds.
Toss in the boiled potatoes and season with salt. Give this good mix or toss.
Cook for 8-10 minutes
Green Chutney
2 cups fresh coriander leaves, packed.
1 cup fresh mint leaves, packed
1-3 green chilies (adjust to your preferred spice level)
1/2 Tbsp – freshly chopped ginger,
2-3 cloves of garlic, peeled
1 tsp cumin seeds (roasted or raw)
½ tsp salt – adjust to your preference
3 tbsp fresh lemon juice
2 ice cubes (optional, helps keep the color vibrant by controlling blender heat)
Water, as needed (use sparingly)
This is how:
Thoroughly wash the coriander leaves and mint leaves. Remove any thick stems from the mint, as they can add bitterness.
Add coriander, mint, green chilies, ginger, garlic, cumin, salt, and lime juice) to a blender or food processor. Add the two ice cubes
Blend until the mixture forms a smooth, thick paste. Start at a low speed and gradually increase it. You may need to stop the blender occasionally to scrape down the sides and push the herbs towards the blade.
Add water one tablespoon at a time if needed to help the blending process and reach your desired consistency. Taste and adjust salt, spice, or tanginess as needed with more salt, chilies, or lemon juice. The chutney is ready to be served immediately. Store leftovers in an airtight glass container in the refrigerator for up to a week.
This is how:
Prepare the wrap as per the instructions, eg: lightly heat it.
Then add a layer of lettuce
Add a good drizzle of green chutney over the lettuce
Add a generous dollop of fried potato in the centre on the lettuce. Fold the bottom edge up over the filling, tuck in the sides, then roll it tightly forward to seal.
You may slice into halves or leave it whole.
Wrap in lunchwrap.
