Green beans are among my favourite veggies.  I use it in a variety of dishes for it’s texture, flavour and nutritional benefits. In this recipe I paired it with soya chunks and this I might add, is a match made in culinary heavan.

A glug of oil

1  sml pieces  Cinnamon stick

3 cloves

¼ tsp mustard seeds

¼ tsp  cumin seeds

A pinch of fenugreek seeds

1 sprig curry leaves

1 medium onion finely chopped

1 sml bay leaf

1-2 green chillies (optional)

½  tbsp (7.5ml) fresh garlic/ginger paste

1- 2 Tbsp (5ml-30ml) mild kashmiri chilli powder

1/2 tbsp (7.5ml) coriander powder

1/2 tbsp (7.5ml) cumin powder

½ tsp (5ml) hing (asafoetida)

2 cups marinated soya chunks (checkout my marinated Soya chucks video)

500g Fresh green beans washed and sliced

Salt to season

1 sml/med tomato finely diced

Fresh coriander leaves to garnish

Let’s cook:-)

Heat oil in a pot

Toss in  the cinnamon sticks, cloves, mustard seeds, cumin seeds, fenugreek seeds and curry leaves.  When the seeds pop and leaves splatter – throw in the onions, bay leaves and chillies – cook until onions just begin to brown.

Spoon in the garlic/ginger paste – give it a quick stir.

Add chilli powder, coriander powder, cumin powder  – give it another quick stir.

Throw in the soya chunks and give it a good mix.

Then stir  in the green beans and season with salt.

Add a bit of water to aid the cooking process.  Cook for 15-20 minutes until the green beans are soft.  Add a bit of water from time to time ensuring it does not burn or get to dry.

When the beans are 90% cooked – add the tomatoes and cook until it melts – 5 mins.  When the tomatoes are melted, give it a good stir.  Turn off the heat.

Serve with rice roti or bread
