Twists have become a very common word in the food industry with everyone adding their own here and there…:-) My twist in this recipe is the pasta…:-) along with some chili, tomato and balsamic vinegar.
Cooking and preparation time – no more than 15 minutes.
2 Cups(500ml) uncooked Pasta screws
40ml Olive Oil
1 clove garlic crushed
1 – 2 green chillies sliced
45ml balsamic vinegar
350g cocktail plum tomatoes, halved
½ tsp brown sugar
2 handfuls English Baby Spinach
1 disk Feta Cheese crumbled into chunks
2-3 green spring onions sliced
3-4 grinds of black pepper
Salt
Let’s Cook 🙂
- Boil pasta as per cooking instructions of packet.
- While paste is boiling. Heat oil in a sauté pan. To a very hot pan – Throw in tomatoes, chilli and garlic. Give it a quick stir.
- Add balsamic and sugar, Cook for 2-3 minutes. Tossing every now and then. Remove from heat.
- Add mixture to cooked pasta
- Toss in spinach leaves, feta and spring onions
- Season with black pepper. Add salt if desired.
