Keeping it light and fresh with yet another variety of my super salads. At times I am in a constant state of dilemma often voluntarily opting for massive bowls of salads and then equally devouring my other meals simultaneously… oh yes I do 🙂 Asparagus are so delicious and to bring out it’s nutty flavour all I do is grill them in a hot pan with some butter …mm mmm mmmm #drewl. That’s about it… For this recipe I’ve used two types of tomatoes which are just sweet and juicy – this compliment the dressing perfectly. Keep it light and Fresh this week 🙂
Preparation: 5 minutes
Cooking time: 15 minutes
Serves: 2 – 3
This is what you will need:
2 cups pasta screws (fusilli)
1 tsp (5ml) olive oil
1 tsp (5ml) butter
180g asparagus (1 bunch)
90g speciality lettuce or lettuce of your choice
10-15 Mini Italian plum tomatoes
10-15 Yellow mini cherry tomatoes
1 small cucumber sliced
100g feta cheese roughly broken into pieces
1 lemon quartered
Glug of extra virgin olive oil
Salt to season
Grind of black pepper

Let’s get this salad started:-)
Boil pasta as per instruction on the pack. Once done – keep aside
Cut 2cm of the bottom ends of the asparagus, and then thoroughly rinse out with cold water. First steam asparagus for a minute. Do not over steam!!! We want it to maintain its crispiness
Heat oil and butter in a pan, toss in asparagus and sauté for a few minutes – 2-3 minutes. Remove from heat and start assembling the salad.
Dress the salad: with a squeeze of lemon juice, a glug off olive oil and seasoning with salt and pepper…keeping it light and fresh J
