When I feel for some pasta along with spice and that curry flavour… this is definitely a dish that will keep your taste-buds dancing with delight #NomNom_Bring_it_on:-) This is one of my old classics that never disappoints

Here’s how
Serves 4-6
300g Spaghetti boiled as per instruction on pack
60 ml olive oil
1 medium onion chopped
½ tsp yellow asafoetida
1 Tbs chilli powder
1 Tbs coriander powder
1 tsp cumin powder
½ tsp garam masala
5 brown mushrooms quartered (alternatively 200g button mushrooms halved)
1 medium yellow bell pepper cubed
1 tsp crushed garlic
80 g tomato paste
125ml water
½ bunch spinach washed & roughly chopped
25-30 plum cocktail tomatoes
10 seeded calamata olives
5 springs onions chopped finely
3-4 green chillies slit in half & deep fried
Let’s Cook 🙂
- Add Onions with asafoetida to heated oil sauté for a few seconds.
- Mix in chilli powder, coriander powder, cumin powder, garam masala, mushroom and bell pepper. Sauté for a few seconds.
- Add tomato paste, pour in water and cook for a minute.
- Toss in spinach and cook until leaves wilt.
- Add tomatoes and olives and fry for 3 minutes.
- Combine pasta with cooked ingredients and stir-fry for 5-8 minutes until pasta is fully coated with curry.
- Sprinkle with spring onion and throw in fried chillies.
