6 medium size Madumbi’s (washed thoroughly and sliced into 1 cm rings)

Oil for frying

Marinade

30 ml oil

1 tsp salt

1 tbsp chilli powder

1 tsp cumin powder

1 tsp coriander powder

1 tsp finely ground garlic/ginger

Let’s cook 🙂 

Marinade the madumbies for minimum 15 minutes the longer you leave it the better flavour.

Shallow fry them for 2-3 minutes on each side on medium heat.

Another option is to cube them finely and fry until crispy.
